Chef de Cuisine
Participate directly in the preparation of recipes and menus. Coordinate and supervise the staff working in the kitchen and in the different services. In the absence of the head chef, replace him. Ensure catering activities. Take responsibility for the tasks delegated to him by the head chef. Participate and ensure the maintenance of kitchen equipment and premises. Oversee and participate in the cleaning of equipment and premises under his responsibility.
Culinary know-how. Knowledge of general hygiene, food hygiene and dietetics, and current safety standards. Knowledge of conservation, packaging, repackaging, and assembly techniques. Ability to manage a team. Knowledge of team animation methods. Knowledge of equipment and new modes of catering. Implementation of technical sheets.
